Greenleaf & Sonder grew from our shared love of food, people, and the moments that happen around the table.

We’re David O’Brien & Hayley Hastings — a husband-and-wife team who met working in hospitality and built a life around creating meaningful dining experiences. David brings his craft as a chef, while Hayley brings her wine and beverage expertise along with a talent for crafting memorable, thoughtful dining moments.

Rooted in Maine, our work follows the rhythm of the seasons and celebrates the farmers, fishermen, and foragers who shape this place we call home. Through private chef experiences, pop-up dinners, and intimate events, we aim to share good food, good company, and a sense of connection that lingers long after the meal ends.

    Chef Dave began his culinary journey on Mount Desert Island. During his teenage years his culinary interests led him to blueberry harvesting and preparing meals for the hardworking fisherman in the community.

    His pursuit of gastronomic education led him to The Culinary Institute of America in New York, where he immersed himself in diverse global flavors and culinary styles, significantly shaped by immigrant communities.

    Upon graduation, Chef Dave commenced his professional career at Wallse, a restaurant recognized with a Michelin star. Inspired by his time there, Dave continued on throughout New England, including notable tenures at Portland's 555 and the rural Burning Tree. During these roles, he emphasized using fresh produce and seafood sourced from and around his island home, thereby providing a genuine representation of Downeast Maine's culinary landscape.

    His approach to cooking is characterized by a celebration of seasonal offerings from local farmers and fishermen, skillfully combining familiar ingredients and techniques, in an unfamiliar way. By drawing upon the rich culinary history of the East Coast, he aspires to elevate modern Maine cuisine, curating an experience that is both accessible and inviting, devoid of intimidation.

    OWNER/GENERAL MANAGER

    Hayley Hastings is a seasoned hospitality professional with a passion for crafting unforgettable experiences. She started her career working alongside her mother in the floral industry in Portland, ME, where she learned the importance of attention to detail and exceptional customer service.

    Over the years, Hayley has gained extensive experience in all aspects of hospitality management, working across Oregon, Massachusetts, and New York, before returning home to Maine.

    She is deeply committed to supporting sustainable agriculture and independent farms, ensuring that every meal served highlights the beauty and authenticity of locally sourced ingredients.

    Outside of her work, Hayley has a deep love for nature and hiking, often finding inspiration in the outdoors. She also enjoys exploring different cultures through cuisine, believing that food is a universal way to connect people and share stories.

    With a focus on creating memorable, one-of-a-kind experiences, Hayley is dedicated to bringing people together over the shared joy of good food, drink, and connection.
